Cu Kettle pairs a copper body with a long, narrow spout and comes in three full water capacities: 600, 700 and 900mL. All three are made in Japan. Start with the total water your recipe needs, then compare the body size and weight in your hand. Full water capacity is the limit of the body; leave headroom when filling it for use.

Copper conducts heat readily, so the body warms quickly on contact with hot water, suiting repeated pours during brewing. The long, narrow spout brings the outlet over the coffee bed, making it easier to observe the pouring path and the tilt of the kettle separately. Begin with a small tilt when practising, then adjust the flow to your recipe.

The 600mL model suits a smaller pouring routine, the 900mL model offers more room for water, and the 700mL model sits between them. Base sizes do not increase in order of capacity. Use and cleaning

Kalita specifies the 700 and 900mL models for pour-over use. Fill to around seven to eight tenths to reduce overflow. Use water boiled separately for brewing, and check the supplied instructions for compatible heat sources before heating. If those instructions permit an open flame, remember that the handle gets hot. Avoid high heat, which can overheat the base of the spout and cause hot water to splash.

The interior surfaces that contact water, hot water and coffee have a plated lining. If verdigris appears, remove it with equal parts vinegar and salt on a soft cloth or sponge. Wash with a neutral dishwashing detergent, then dry thoroughly.

After daily use, let the kettle cool, wash with a soft sponge and neutral dishwashing detergent, rinse and dry thoroughly. Avoid scratching the plated interior. Open the lid before storing and check that no water remains inside the body or spout.
